Recent testing at a major brewery compared both major brands of liquid yeast with our Fermentis Safeale us-05 dried yeast (result to be published soon). Dried yeasts were found to virtually identical in function and beers produced to the liquid varieties. The main virtue of liquid yeast remains the incredible breadth of available strains. However the best of the strains are in dried forms such as the Safeale us-05 popularly know as the "Chico" strain and the predominant strain used in the US craft brewing industry.
